Some might know the space above Borough Market boozer Globe Tavern as the flat where Bridget Jones whiled away her single years in a cavalcade of wine and cigarettes. But for London’s food fans it’s been the site of numerous top-tier restaurant residencies, including northern Thai diner Khao Bird, which has just opened in Soho, and West African restaurant Chishuru, before it moved to permanent digs in Fitzrovia. Now, its next iteration has been announced: chef Tom Geoffrey’s Cambodian-inspired concept Barang will take over the space from November 25 until the end of March 2026.
The menu will star small sharing plates like scallop with tamarind brown butter and pig’s ear crackling; venison larb with pork fat and a variety of Khmer spices; and an ex-dairy bone-in sirloin with bone marrow and prahok (fish paste) dripping and chilli relish. To finish, there’ll be a pineapple and galangal sorbet with candied nuts and a lime-leaf meringue.
Geoffrey’s fire-fuelled menu will pull on years of travelling through Cambodia, and recent residencies at Carousel and Oranj, as well as at Bai Sor, a modern-Cambodian restaurant in the country’s capital Phnom Penh.
Joining the Barang team for the residency are general manager Angus Gray (ex-Mac & Wild and The Lockhart). Former Swift Borough general manger and bartender Rachel Reid will be on cocktail duties, with her menu including a gin Martini spiked with kampot pepper.
Barang soft-opens at The Globe Tavern from November 25– 27 with 50 per cent off food, and formally opens on November 28. Bookings now open.
