Trullo chef and co-owner Conor Gadd will open his first solo restaurant, Burro, in Covent Garden in 2026. It’ll encompass a bar, a dining room and a terrace, and like Trullo – the beloved Highbury restaurant that opened in 2010 – it’ll be doing Italian classics, plus a few dishes inspired by the historical area.
Burro translates as “butter”, and diners can expect dishes like fried artichoke with bottarga and chilli; fresh pastas including a Roman-style fettucine alfredo, and tagliatelle with duck and porcini ragu; and heavier plates including Dover sole with caviar, and vitello al burro (veal with butter). The dessert menu will feature fun riffs on classics, including tiramisu bomboloni, and almond cake served with butter and a glass of marsala.
Lisa Helmanis, creative director at Day Studio (Padella, Trullo), is behind the design. It will incorporate references to Gadd’s Irish background as well as “Italian ’50s” bistros, she said in a statement, via woods, marble and a selection of artworks.
Gadd joined Trullo in June 2010 – not long after founders Tim Siadatan and Jordan Frieda opened it – following training at the Ballymaloe Cookery School in Ireland and a stint at influential wine bar Terroirs. He was appointed head chef 18 months later, and in 2022 took the role of managing director and co-owner.
Burro will take over the space formerly occupied by Petersham Nurseries’ Covent Garden outpost, The Petersham.
Burro opens at 2 Floral Court, Floral Street WC2E 9FB in early 2026.
