First the Four Legs team won Londoners over with its burgers at The Plimsoll in Finsbury Park, then it reconceived the chippy through a Spanish lens just a couple of streets away at Tollington’s. Now it’s coming for pizza. Enter Bar Etna, a collaboration between Ed McIlroy, founder of Four Legs, and Joe Beddia, who is behind fabled Philadelphia pizza destination Pizzeria Beddia. The East Coast-style (traditional, tending towards a crisp base and often traditional toppings) pizza bar opens in Newington Green in April, and will bring together two operators with a passion for ace produce and considerate sourcing. It will be Beddia’s first restaurant outside of the United States.
Beddia founded his standing room-only pizza shop in Philly in 2013, turning out just 40 pizzas a day. It was named best pizza in America by Bon Appetit in 2015 and in 2025 Michelin awarded it a Bib Gourmand. These days, Pizzeria Beddia occupies a more restaurant-style space where it serves small plates and cocktails as well as its famous pizzas. Bar Etna will take a similar approach; expect whole signature and seasonal pizzas, plus Italian-American dishes like aubergine parmigiana and meatballs, as well as soft serve. It’ll also pour spritzes, have Negronis on tap and a list of low-intervention wines, and be open till late.
Craftsman Michael Stampler is also part of the opening trio; he’ll be involved in the operational, design and development elements. His concept for the space is driven by mid-century Milanese design, leaning on the building’s heritage features, as well as its natural light.
“This feels like a natural next step for Four Legs to work with chefs beyond our immediate circle,” said McIlroy in a statement. “Joe is an incredible chef and a great guy with a similar ethos to ours.”
