The creator of Spoons, the Indonesian supper club with a cult following, is topping her limited-edition beef burger with sambal chilli sauce, acar (pickled vegetables) and Indomie mi goreng noodles.

One of the best things about burgers is how adaptable they are. The format offers infinite creative possibilities – and this is being embraced at Zula Burger, the Marble Arch-adjacent diner that became the first London outpost of the Istanbul-based restaurant group when it opened in 2024. Its new chef collaboration series will see three UK-based chefs create limited-edition burgers that will be available for a month each.

Kicking off the series in April is Rahel Stephanie – the London-based Indonesian chef who has been making waves in the capital since launching her Spoons supper club in 2019. Since then, the cook and entrepreneur has championed lesser-known Indonesian recipes and nostalgic dishes. In 2024, she launched her zine Pedas, which focused on the spicy, fiery side of Indonesian cuisine.

Stephanie’s burger – launching at Zula on April 13 – is as playful as it is personal. She’s chosen the humble Indomie mi goreng noodle as its centrepiece. The globally popular instant noodles, with their familiar sweet-savoury flavour, will sit on top of a thick Aubrey Allen beef patty, along with American cheese and staples of Indonesian cuisine, including crispy fried shallots, a fried egg, sambal chilli sauce and acar (pickled vegetables). It’ll be served in between Zula’s signature brioche buns which are baked in house.

If you’re keen to get your hands on the Mi Goreng Burger, you’ll need to get in early: just 20 are available each day.

Next up in Zula’s series is a June collaboration with Ana Ortiz, the Galápagos-born, UK-based chef known for her fire-led South American cooking. Then in July, Camille head chef Elliot Hashtroudi will close out the series with a regional French take on the classic cheeseburger.

Rahel Stephanie’s Mi Goreng Cheeseburger will be available from April 13 to May 11 at Zula Burger, 5 Old Quebec Street, W1H 7AF.
