Crisp New York-style pizza is Hannah Drye’s MO. The chef-founder of Dough Hands started as a Brixton market stall in 2020, and has since built a loyal following at various pub residencies – currently The Spurstowe Arms near London Fields and All My Friends in Hackney Wick, previously at Nunhead’s The Old Nun’s Head. The roving pizzaiolo has had plenty of hits on her hands, including the Jode, with its salty-sweet tomato base and blobs of stracciatella, a spicy kick of ‘nduja and hot honey and a sprinkle of grana padano on top. Drye knows good pizza – so Broadsheet has tapped into her palate, to ask her where she eats (pizza and not-pizza) around town.
What’s exciting you about London’s restaurant and dining scene right now?
It’s obviously a scary time at the moment for hospitality and sadly we are seeing lots of places close – however, we are also seeing new places open almost every week. I think it’s exciting to live in a city where people are pushing forward with their dreams and projects, despite the fact we know it’s hard out there right now.
Aside from your own slices, where do you head for pizza?
Deffo Fresh Hot Pizza. It’s super light, super crispy pizza. I’d go for the Popeye – creamed spinach and vodka sauce – which I rate a lot for being different to pizzas on other menus at the moment.
What’s your favourite coffee spot?
Maya’s Bakehouse! It’s ‘round the corner from mine, they have the best cold brew on and I always pick up a little jalapeño cheddar sourdough when I’m there.
It’s date night. Where are you going?
Tiella! It’s got a beautiful, dimly lit cosy vibe, and what’s sexier than sharing some saucy pasta and a bottle of wine?
What’s your pick for a great drink and snack?
Cafe Mondo! There’s no better snack than a sandwich, and they’ve also got a menu of fun cocktails and beer served in chilled glasses.
Where do you take out-of-towners?
Quality Wines. I had one of the best bites of my life – the bifana – here. It's consistently delicious, the wine menu is great, and it’s right by Exmouth Market which is perfect for pre- or post-dinner drinks, especially in the summer.
Where do you go if all you want is a good time?
Mascara Bar in Stoke Newington is my guilty pleasure. I’ve never had a bad night (or one that I remember!).
What’s a London hidden gem more people should know about?
Lucia’s. People know about it, but I feel like more people need to get to know it. The smell coming out of that place when you walk past is mad, so smoky and delicious. They do loads of great mezcal, tacos and other bits. It’s a tiny intimate spot and you can watch the chefs cooking up a storm in front of you.
